Bacon, Veg & Butter bean Soup

This is super delicious, easy to make, and you can freeze it.

1 pack of diced bacon
2 cans butter beans
2 cans tomatoes
1 onion, diced
4 carrots, diced
4 celery stalks, diced
2 garlic cloves, crushed
chicken stock, 1.5l
tomato paste, 2 tablespoons
butter, 150g
olive oil
flour, 3 tablespoons
barley, optional
1 can V8 juice, optional (recommended)

Melt the butter in a pot, add a dash of olive oil. Add the onions and fry for 3 minutes. Add the bacon add fry for a few minutes more. Add the carrots and celery and fry for about 7 minutes, add the garlic during this process.

Stir in the salt, pepper and flour. Then start adding the stock in gradually, don’t stop stirring. Add the rest of the ingredients, expect the butter beans, and let simmer, stirring occasionally, for 30 minutes.

Add the butter beans and simmer for another 10 minutes. You can liquidize the soup or leave it chunky. I like to add one can of butter beans to the soup, liquidize it a little, and then add the last can.

Serve with toasted bread.
