Eggshrooms

Quick, easy and something different. And it looks impressive.

INGREDIENTS
4 big brown/portobello mushrooms
4 eggs
Oregano
pepper
Cheddar
Parmesan
Crushed garlic
Olive oil
Spray and Cook

METHOD
Cover a baking tray with foil and spray a layer of Spray and Cook. Heat the oven to 180 degrees.

Remove the stems from the mushrooms. Add a little oregano, pepper, crushed garlic into the mushrooms. Brush the inside with olive oil. Top with a sprinkle of Parmesan. Carefully crack an egg into each mushroom, without breaking the yolk.

Place the mushrooms on the baking tray into the oven for 10 – 25minutes. Remove when the egg whites are cooked and yolks are still runny. Remember that the eggs continue to cook even when removed from the oven.

Serve immediately, with some bacon and grated cheddar on the side.
