Rosemary Parmesan Pepper Sauce

This sauce is rich and delicious. It goes great with steak or veg. Or add mushrooms and bacon for a mouth-watering pasta sauce.
 
INGREDIENTS
  • 2 teaspoons garlic, finely diced or minced
  • 1 cup freshly grated parmesan cheese
  • handful of cheddar, grated
  • 1 cup dry white wine
  • 1 cup cream
  • 2 tablespoons freshly chopped rosemary
  • ¼ teaspoon sea salt
  • 1 teaspoon pepper
  • 2 teaspoons butter
  • 1 cup milk
  • 2 teaspoons flour
  • small onion, chopped finely

METHOD

Use a sauce pan and melt the butter, add the onion and cook, add the garlic and cook for a further 2 minutes. Ad the flour and stir for another minute. Ad the milk and cook until boiling and thick. Add the wine, fresh rosemary, pepper and salt. Cook around 12 minutes on medium heat. Add cream and stir on medium heat for around 25 minutes, allowing sauce to thicken. Add 1 cup of freshly grated parmesan cheese and the cheddar.

Serve on steak or veg.
